The carbs don't sound balanced to me. That is what gives you the VW sound at idle.
However, lets first make sure you are ok with the fuel mixture. You can read this more in the best of section under balancing of carbs, or you can read the short version here. Take a bottle of propane, such as a plumber would use to fix a pipe, and give each intake a short shot. If you are lean, the engine will rev up, if you are rich, the engine will slow down. If you are right, then there will be no effect. Do this for all four venturies one at a time.
Once the carbs are balanced, it should idle really well. In fact, a set of dual carbs with a 40/80 cam will idle much better than a single carb with a 35/75 cam.
