Awesome, great info. I can see I've been doing it wrong after washing it. As much as I love cast iron I don't use it nearly as often as non-stick. All those little steps add up in time and attention which I don't usually have during the day... but for things like chicken or searing a steak, cast iron is definitely the way to go. (oh and now pizza!)
