This is most likely already noticed by those who own SBK2 and still play alot or remember it clearly, but I'd thought I would like to point it out in a topic.
I've noticed that in the Story mode of the game, there's some sort of running cameo gag going on with that in almost every course there appears to be a sprite animation of Damien being upset in the background. I took the time in looking around each course to see where he appears so you might check it out yourself if you're interested.
The courses where Damien doesn't make a cameo appearence as a sprite animation are the Boss ones, Wendy's House due to the cutscene before that showing only the other kids having shrunk down in size, so logically Damien doesn't appear in it since he wasn't there and couldn't have shrunk down as well, and Ice Land due to his only AI opponent appearence there in both the race and boss stages of the course.
Sunny Mountain: At the start of the first lap, when you approach the first cabin on the right, if you pause it at a good distance you can see Damien on the roof of it, but when he comes into closer view he will jump into the chimney, and won't re-appear in further laps of the race.
Turtle Island: Shortly after the start, in the area between the wooden bridge and the first stunt slope there's a large flower field. If you hang to the left side of the track on that part, you can see Damien on the very left side of the screen somewhere between the flowers.
Jingle Town: You can't really miss this, near the end on the ice part after the pink bunny obstacles, you can see Damien between a bunch of penguins on the sharp left turn.
Linda's Castle: Also near the start, after the first slope jump over a cliff, in the dining room Damien is standing on top of the large birthday cake in the upper right corner of the room.
Crazy Jungle: When you arrive at the 2 seperate routes after the waterfall part, the left one being the normal route but the right one being a risky 2-pole shortcut, take the left one. If you keep to the left you'll see Damien being stuck in one of the plants.
Starlight Highway: You can't really miss this one at all, he stands on one of the 3 upright-benching poles before you come to the first small passageway.
Haunted House: Also not very easy to miss, he stands on the very top of the entrance of the house. You can even see him right at the start of the race of you look closely to the right before it even starts.
I don't know if he also appears in X-Course or in Snowboard Street, but I've yet to check that.
