Don't know if this interests anyone, but I found a website that describes the cars used on TV and movies, called IMCDB (Internet Movie Car Database).  Some info (not much really) on each of the vehicles used by Lee and Amanda.   
I just thought it was interesting.  Maybe somebody here knows a little more and could post some more info or input to the comments there.

Is it sad to say that I found this really interesting....I never knew that Lee had TWO Corvettes either. The second one was identical but had an extra brake light or something according to this site.......

SMK4ever, I found it interesting too.  I just wish there had been more trivia about each car.  We definitely need to find someone who has some more facts and could fill in all the interesting info about those cars.

Lee did indeed have two different Corvettes.  A 1984 and a 1986.  The 1986 had the third brakelight. 
There was a third Corvette that was used in several episodes that was actually two-toned with a darker
shade of grey on the lower sides of the car (this 3rd Corvette was primarily seen parked in front
of I.F.F. in the second season)
Amanda had a 1983 Ford LTD wagon from season one through the middle of season two.  (2 vehicles known to exist) 
A second unit stunt car and the "show" car.  (a 3rd vehicle exists that was used in D.C. filming) 
Amanda's 1985 Oldsmobile Cutlass Cruiser makes its debut in season two's "Spiderweb".  (4 vehicles known to exist) 
A second unit stunt car and the "show" car.  Like the Corvette & the Ford, an extra vehicle exists, it was used in the I.F.F. shots
in season 3 when Amanda is pulling into or out of the garage.  These extra vehicles were probably located in the D.C.
area as it would have been extremely expensive to ship these cars to the east coast for filming.
Interesting note about the Cutlass Cruiser.  The "stunt" version was actually a 1984 model with the 1985 grille attached,
along with the correct headlight surrounds.  The front side orange turn signals on this stunt car were glued on, as they
never existed in that position on the front bumper in 1984.  Also, this vehicle still had the 1984 style front bumper.
Another interesting note:  this stunt car was a slightly decontented version compared to the show car.  The stunt car
does not have the rear swing-out quarter windows.  (This indicates a lack of a third seat.)  Also, the stunt car has the
standard instrument cluster, not the "rallye" gauges that the show car had.  The stunt car had a very light tan dashboard
and steering wheel, whereas the 1985 show car has a much darker brown dashboard and steering wheel (in the season 3 vehicles).
The Cutlass Cruiser had a blue interior in season 2, a tan interior in season 3.
In "Wrong Number" the stunt car is used throughout the episode.  This is unusual because Kate Jackson was almost always
seen driving the show car.  My guess is that the show car was damaged earlier in "The Eyes Have It"
(as both cars are clearly used in this episode).  In "Wrong Number", Amanda
is parked in Will Towne's driveway and you can clearly see the broken air deflector over the back window. 
This piece was broken off by the roof from the bus stop when Lee & Amanda crash through it in "The Eyes Have It".
In season four, Amanda is driving a 1986 Jeep Grand Wagoneer.  I have not studied this vehicle as much as the Oldsmobile
or Ford, so I am less well-versed about it.

I'm no car expert. I freely admit that. But I can't help but notice similarities between Amanda's car and the one that the Murtock family drove in the Lethal Weapon movies.
Even if for some reason the headlights are missing. Though that could be because they knew they were going to shoot it up, lots!
