Sour Cream Cucumber Salad
2 cucumbers, peeled and sliced thinly
1 lg. clove garlic, minced
16 oz. sour cream
freshly ground pepper
1/2 tsp dried dill
1/2 tsp. sugar
zest and juice of 1/2 fresh lemon
1/2 med. red onion, slice thinly
Slice cucumber and place in a colander. Sprinkle with kosher salt. Place a paper towel on top of the cucumber slices and set a bowl on top. Let water drain for 45 minutes. Meanwhile in a bowl mix all the other ingredients. Fold drained cucumbers into sour cream mixture. Refrigerate 2-3 hours or overnight.
