Robyn's Italian Sausage Garden Soup
My neighbor Robyn Halasz gave me this secret family recipe. It was delicious. I made it without the tomato.
2 med. onions, chopped
4 carrots, peeled and chopped
3 celery stalks, cleaned and chopped
7 Italian sausages, casing removed
3 cloves garlic, minced
1/2 c. white or rose wine
16 c. or more fresh chicken stock
1 can tomatoes, chopped (optional)
salt and pepper
1 can cannelini beans
1 handful fresh herbs (oregano, basil, parsley and thyme), chopped
2 bay leaves
Cook onion, celery and carrots in butter and olive oil until tender. Add in sausage and garlic. Lightly brown. Pour wine into pot and reduce by half. Add in stock and tomatoes. Season with salt and pepper. Bring to boil and then simmer 1 1/2 hours. Add in beans, bay leaf and fresh herbs. Simmer 1 hour more.
