Minestrone

5 liters good stock(vegetable)
2 leeks thinly slices2 white onions
1/2 cabbage

2 large carrots
1 zucchini
2 peeled potatoes
1 handful fresh spinach
2 artichokes
1 slice pumpkin
4 swiss chard
2 celery stalks
4 cloves garlic
1 cup tomato sauce
1 cup boiled cannellini beans(optional)
1 cup olive oil


Dice veggies same size and keep separately.

Chop and fry garlic.

Add veggies, slowest ones in first

Start with carrots, artichokes potatoes, leeks, cabbage and pumpkin
then zucchini, swiss chard & spinach

Add stock and tomato sauce let reduce by 25%

Add beans, season to taste.

Add veggies slowest cooking first.
Add stock and tomato sauce let reduce 25%.
Add beans.
Season to taste.
