Dave's Lucious Lentil Soup

2 teaspoons Olive Oil
1 Med size Onion, finely chopped (or substitute 2 leeks washed and thinly sliced)
1 Med size Carrot, finely chopped
1 Rib Celery, trimmed and finely chopped
2 Cups Dried Brown, or Green Lentils (picked over and rinsed)
4 Cups Defatted Chicken Broth/Stock (homemade preferred)
2 Cups Cold Water
Salt and Freshly ground Pepper

Optional:left-over Ham bone (makes a HUGE difference in the flavor, or use a Smoked Ham Hock)


Heat oil in heavy 4-quart saucepan over medium heat.
Add the onion (or leek),carrot and celery and cook,stirring until vegetables begin to soften, (2-3 minutes).
Add the lentils, broth and water and bring to a boil.
Add the ham bone if you have one.
Partially cover the saucepan. reduce the heat to medium-low, and simmer until the lentils are soft and the soup is thick, about 45 minutes.
Transfer half of the soup to a food processor or blender, and pulse the machine a few times to lightly blend the soup.
Return the soup to the saucepan, stir to combine with the remaining soup, season with salt and pepper, and heat through before serving.
