Leah Lampirez, of Redfield, Ark., loves avocados, so she was eager to try this guacamole recipe several years ago when a friend gave it to her. “It’s a special treat for me, and it’s kind of a healthy treat,” she says.
2 medium plum tomatoes, finely chopped
¼ cup finely chopped red onion
2 cloves garlic, minced
2 Tbsp. lime juice
1 Tbsp. olive oil
¼ tsp. salt
1/8 tsp. ground black pepper
2 ripe avocados, seeded, peeled, and coarsely mashed
¼ cup snipped fresh cilantro
1.In a bowl, combine tomatoes, red onion, garlic, lime juice, olive oil, salt, and pepper.
2.Gently stir in avocados and cilantro.
3.Cover and chill 1 hour. Serve with tortilla chips.
