Mexican: 2 servings
1 can pinto beans
1 can hunts diced tomatoes
chili seasoning (about a TBs. from pkg. or just season your way)
heat thoroughly. Top each serving with 1/2 cup of cooked rice, chopped onion. You can add a little salsa and some
low fat sourcream at the table too. Cilantro if you have it.
Cajun:red beans and rice 2 servings
this is my diet version of a New Orleans classic
1 can kidney beans, 1 can of diced tomatoes, cajun seasoning to taste, some chopped fresh garlic.
heat throughly. Top each serving with 1/2 cup cooked rice. Season with hot sauce.
Navy beans;2 servings
1 can navy beans, 1 can tomatoes, salt, pepper. Heat and top each serving with, you guessed it, 1/2 c cooked rice. I chopped some onion up for a garnish on this.
Quick and easy after work and a serving is a good size satisfying bowl full. I make the rice ahead and just microwave a half cup in the bowl then add the bean/tomato mix after it is heated in pan.

I have one too...
Sauteed garlic, 1 sm. jar roasted peppers (lightly drained & chopped) and 1 can cannelini beans in a little olive oil. Add about a Tbls. of balsamic vinegar (the beans soak up the flavor without it being vinegar-y).
Add 1 bag spinach. Saute and serve. Good with fish on top.
