Since MenuetOS is written in assembly language does it mean that it can only run on certain processors or any processor?
If it runs only on certain processors then which are those?
I would appreciate any help.

Its written in x86 assembly which means only CPUs that support this architecture:

Even if most of the world uses Intel or AMD CPUs there's a possibility that you have a Cyrix or VIA CPU that also works.
With 64-bit MenuetOS you need to have a set of CPU+motherboard that support AMD64/EM64T architecture and the minimum SSE extensions are SSE2 (I think!). But there is no worries because all CPUs from Intel and AMD (that are 64-bit) support at least SSE2. VIA and Cyrix should support SSE, but I'm not sure about the 100% compatibility.
