South Sister is a Class 1 with 5k' elevation gain. Gorgeous view on a clear day.
Middle Sister involves some snow walking and is a little less popular.
Steve mentioned Black Butte, which is also good.
For something a little more off-beat, try Black Crater.
Explore the Dee Wright observatory on McKenzie Pass and wander the nature trails. You can hike out toward Belknap Crater through the lava, but the lava will eat your shoes. I've walked the PCT (Pacific Crest Trail) toward the N. Sister from there. After about an hour, you get some nice views.
Good PCT hike toward Three-Fingered Jack will get you some views, but it's very exposed 4th/low 5th to the summit.
Go explore Smith Rock State Park and watch the 'rock monkeys.' Worthwhile.
Newberry Crater and the obsidian flows.

Is that enough for one week? LOL

Like John said, I grew up hiking around the McKenzie Pass and Belnap- its a little bit of a drive from Redmond but worth it! Probably the most beautiful place on earth ( I am biased-LOL), and the hiking is gourmet!

You still need to pound a Blake Butte Porter. : ), cuz you are Bedrinkable

For the hike and the drink suggestions! It did occur to me that I would be in beer central (for Oregon anyway). Black Butte Porter is always welcome.
