I attended a meeting today. A Waldorf Salad was served which was good. But I think I would have made it differently.

The salad included unpeeled, diced apples, raisins, coconut, and some type of dressing.

I think I will make mine with peeled diced apples, rasins, coconut, walnuts, and ranch dressing!

The peel is left on so the apple does not brown. When I used to make it I made it with walnut pieces instead of coconut and thousand Island Dressing.

My mother always made a sweet waldorf salad. Apples, celery and nuts with sugar water coating it. Yummm!!!

I usually use fat free mayo and put a little Equal into mayo before adding to salad. I too use apples, celery, raisins, coconut, although I don't use as much coconut as I used to. I sprinkle with a little cinnamon sugar.
