SPICY TERRIYAKI CHICKEN AND RICE IN SLOW COOKER
In the slow-cooker, put:
2 onions, peeled and coarsely chopped
2 cups baby carrots
3 stalks celery, sliced
1 8-ounce package mushrooms, cleaned and cut into slices
1 stick butter, sliced
2 cans chicken broth
chopped garlic (from a jar) about 2 tablespoons
garlic powder about 2-3 shakes from the jar
red pepper flakes about 2 shakes from the jar
chili powder about 2 shakes from the jar
about ½ cup teriyaki sauce
1 cup brown rice
In a sauté pan, brown about eight chicken thighs in olive oil and add to slow cooker. Add the drippings from the sauté pan into the slow cooker as well. You can take a little hot water and rinse out the pan and pour that into the slow cooker too.
Put slow cooker on medium or high, cover and let cook for about 6 hours, stirring through occasionally.
As usual, all things can be adjusted to your tastes and what you have on hand.
