DD gave me this recipe. I made it yesterday and it is so good. Compliments to the chef from DH said it tastes more like a dessert. You can make it again.
1/2 cup butter (I use entire stick, whatever that might be)
2 large sweet onions (about 1 lb, thinly sliced)
8 oz cheddar cheese (grated or shredded) about 2 cups... divided
1 container (8 oz) sour cream (I usually use about 12 oz)
1/4 cup of minced dill (jars in baking aisle) (this is a KEY ingredient)
1 package ( 8 1/2 oz corn muffin mix)
1 14 3/4 ounce can of cream style corn
1/2 cup milk
Preheat oven to 425 degrees... Butter 2 1/2 quart baking dish.
Melt butter over medium heat, add onions... cook until softened (5- 6 minutes)
Remove from heat, stir in 1/2 of the cheese, all the sour cream and all the dill until combined... set aside.
In bowl lightly beat egg. Stir in muffin mix, corn, milk.. once stirred spread it in a baking dish.
Top with the cheese / onion mixture.
Top with remaining cheese.
Bake 35 / 40 degrees until top is golden and mixture is bubbly!!
