Another slow-cooker recipe I just put together and came out delicious. I started it last night and it is now on the 'keep-warm' setting. We will enjoy this for lunch today.

LENTIL AND TURKEY STEW

In the slow-cooker, place the following:
ONION - 1, peeled and diced
CELERY – 6 stalks, sliced
COOKED TURKEY – About 4 cups, shredded – light and/or dark meat
BUTTER – 1 stick, sliced (could be reduced or omitted)
GARLIC POWDER – to taste
CUMIN – to taste
GINGER – to taste
LEMON JUICE – about 2 tablespoons
LENTILS – 1 bag
BEEF BROTH OR STOCK – 4 cans

Stir all ingredients together thoroughly. Cover and cook on low 8-9 hours, stirring occasionally. Add additional liquid if needed. Enjoy!
