Baked Garlic Mashed Potatoes

I'm always looking for dishes I can easily prepare and cook or bake in the oven. Here is my latest creation.

Ingredients:

6-8 Potatoes (depends on size), any type, peeling optional, cut into 1 inch pieces
Garlic cloves, peeled, amount to taste (I use a whole head)
1 onion, peeled and roughly chopped
1 stick butter or margarine, cut into 1 inch chunks
Garlic powder to taste
Salt and pepper to taste

Preparation:

Spray a 13 x 9 inch baking pan with cooking spray. Place all ingredients into baking pan, mix together, and cover with foil.

Bake at 375 degrees for 50-60 minutes until potatoes are tender.

Remove from oven and very carefully remove foil.

Add 1/2 cup milk and mash until smooth. Add more milk if you want looser mashed potatoes.
