1 cup granulated sugar
4 cups granulated sugar
1 1/3 cups milk
2 cups pecans more or less
2 teaspoons vanilla extract
4 Tablespoons butter or margarine
In a small heavy skillet, over medium heat, carmalize 1 cup sugar until
melted, stirring frequently.
In the meantime, cook sugar and milk in a large
or medium sized sauce pan, stirring frequently. Add caramelized sugar
and pecans. Cook on medium heat until mixture will form a soft ball when
dropped into cold water.
Add vanilla extract and butter or margarine.
Do not stir.
When cool, beat until it begins to hold shape.
Drop into mounds on waxed paper.
