I really loved the 3D rendered anime-style characters in FF7, in fact, I thought those looked the best, i hope by remaking it, they don't mean that they will also change the FMV characters to FF8 style (although i doubt it, it will be WAY too much work)
most of the games now days either try to look really realistic or anime-looking...its really sad for me since i LOVE those in-between games like FF7. (crono cross was kinda in between too, go CC)
looking at FF7 now, have to agree that it really doesn't have the best graphic. however i thought its prerendered backgrounds is prettier than anything else, even FF8. some scenes in Medger really really made me fall in love w/ it. Sector 6 slump for example, in real life, it would prob. be a dirty, polluted place, but in the game, it just seemed really dreamy, like the whole pollution, the whole monopoly of a company is just a dream, a fantasy. I also liked Aeris's garden outside of her house (the flowerbed in the church too) a lot, it just seems totally fit w/ her image, an Ancient. There are too many beautiful sceneries in FF7, it blend in both the industrial and the medevil feeling...that's one of the reasons i like it so much....
compare to FF7, i think FF8 looked more "bright" and industrialized...more like our earth now...doesn't really attract me that much...since its so "everyday" looking...i do like deling city though...or whatever that town was called, where rinoa was from...
