Japanese ones go "Kweh", English ones go "Wark". Rumors are that if you breed a Japanese one with an English one, and feed it plenty of greens, it will go "Spok".
People don't know what that means, but rumors are that you tell Barret "Spok" in Final Fantasy VII, and not only does it let you revive Aeris, it'll let you go on a date with Sephiroth at the Gold Saucer, only to come back to a night of romping in the bed with Tifa and Sakaguchi.

hahahahahahahahahahahahahaha Reeeeally Jim? I seem to remember FFVII chocobos go kweh, VIII's go wark and IX's go kweh again. I don't know about the rest because I've never played them. What do FFX chocobos go, anyone?

Hm...I honestly don't remember. All I remember was "Wark", and I think I heard something about the Japanese versions having one, and the English versions having another. Then again, maybe they say "Kweh" too.
First make sure you have the English pc version of FFVIII and the Japanese version of FFVII. Replace the save slot of FFVIII with one of FFVII, now you'll be able to sacrifice Rinoa at the Sorceress Memorial which releases the Esthar Materia. Leave the Sorceress Memorial. Save the game in the FFVII slot and reboot the computer. Start your saved game and re-enter the Sorceress Memorial. Now Aeris is there and Squall will save her and there's a Squall-Aeris kissing FMV. Now take Aeris to the Chocobo forest on the Island where Cactuar can be found. Let her use the Chocobo whistle and you will catch a Chocobo that will go Kweh! in your English version of FFVIII.
