I took an eye of round and with a very sharp filet knife cut it in a spiral motion to make it a 1/4" flat.

I pounded it flat and used my needler to tenderize. I than place a thin layer of sausage on it followed by a layer of bread stuffing. Rolled and tied it and baked for an hour.

Came out moist and tender but the sausage flavor was strong.

and you managed not to cut a finger off. Good for you! Seems like I remember Lake stuffing something with sausage and it took over the flavor of everything.

I know Ms. Bonnie was happy with all that cow!

I like those asparagus tips they sell now. Of course, maybe they've been selling them forever and I'm just slow...

It looks wonderful! I think I'd like to try that. How did you do the asparagus? Once I had some that was cooked a little but I don't know how they did it, steamed maybe? Any leftovers???

I just steamed the asparagus for about 3 min.

Had the leftovers for lunch. I took the leftover baked tater sliced it up and sauted them for hashbrowns.
