(in movay world...) Is Spiderman's story only interesting when they tell it from the beginning? Is Batman only good when he's fighting the Joker?

I believe Spider Man`s later adventures are better than his origin story. Also Batman has better battles besides the Joker. And yes, I am being serious.

No - Spiderman is terrible at any point.
No - Batman has the best lineup of foes of any comic franchise.

Speaking of Spider-Man and Batman, is anybody pumped on seeing the Amazing Spider-Man and The Dark Knight Rises?

Spider-Man 2 is my favorite from the Sam Raimi trilogy. Three was a complete mess. I remember coming out of the theatre (after seeing the film for the first time) saying to myself, "What the hell did I just watch?" But I have to say I did get a chuckle during Pete's emo dance scene.
